Nigella's Guiness Cake

Nigella's Guiness Cake Here is my son's 21st birthday cake. He requested Nigella's Guiness Chocolate Cake, which is a firm favourite with both of my sons. It is in her book 'Feast' and uses a whole pack of butter, a tub of sour cream and about 400g of sugar - yep, heart attack on a plate. The icing is cream cheese and double cream, oh boy is it good.

Title: Gelt Inc: Whirlwind of a day in Bakersfield

We had a busy day in our second home of Bakersfield. We began the day checking up on our rehab fourplex project on Bernard St. Everything was going as planned. It is vital to regularly oversee the rehab of your property so you can cut the time down and keep costs in check.

We have successfully added washer and dryer hookups in these units in order to provide the tenants just one more desirable amenity. We had to be creative when installing these. We installed them in the closet. We had to enlarge the closet openings in order for the tenants to get their machines into the closet. Our plumber and carpenter did excellent work.

We have painted 3 out of the 4 units and are preparing to work on the cabinetry, electrical, and general plumbing issues next.

At lunch time Damian and I attended our first KEDC lunch. We learned all about KEDC and met other business leaders in the community. We are looking to be a part of this excellent organization that does so much for the city of Bakersfield.

Kern EDC is a private nonprofit company dedicated to ensuring a diverse and strong economic climate for all businesses in Kern County. Kern EDC recruits new businesses to Kern County, helps established businesses with relocation and/or expansion efforts and works with local companies to provide economic data, workforce information and facilitation of the regulatory process.

After this meeting we went to check up on all of our properties. Four of our properties are within walking distance to a Boys and Girls Club. We have passed by this building hundreds of times without knowing much about it. We finally decided to go in and see what it was all about.

To our surprise, this facility was state of the art. It had a large basketball court that was bigger than my high school's! They also had a large art room, reading rooms, computer rooms, a kitchen, and much more. We were so impressed with the quality of the facility and the sheer number of children that were there after school hours.

At Gelt Inc. we believe in supporting our local communities where we invest our money and time in. We are proud to say that we made our first sizable donation to this local facility that provides so many activities for the local youth.

It is our goal to get more and more involved with other philanthropic organizations in Kern County.

We are also excited to say that we will be closing on our 8th fourplex acquisition in Bakersfield tomorrow.

[Cookie 065] Hazelnut Thumbprint Cookies (And PARTY TIME!)

It's time to celebrate! Unleash the balloons! Start the party! Get the piano out, round up all my horse, pig, mouse, and other bizarre unnatural animal friends and get this party going. If you don't know what I'm talking about, watch that video--it's worth it, the best part's at the end.

Aaaaanyways....Hurrah! One year DONE! I've been on this project for a year now, and I'm still goin strong. I feel like now is a good time to reflect, and while most recipes from The Book are pretty simple and delicious, occasionally a recipe might go something like this:


Okay truth be told, that was just an excuse for me to post that video, which just cracks me up every time. Look, the point is, some recipes suck, most don't, and I like baking. Hurray for this blog's first birthday--now let's move on.

Hazelnut Thumbprint Cookies! Yeah, so I didn't go off and make something spectacularly exciting to celebrate the monumentous event. Big deal. These cookies were just fine, so I'm happy. They weren't anything shockingly amazing, but they tasted nice and could be easily modified in a bunch of different ways. Don't like hazelnuts? Try walnuts, or pecans, or maybe even pine nuts. And you can choose whatever filling you want: jams, preserves, even Nutella could work (when could Nutella not work, is the real question). You could even fill the centers with home made whipped cream and top the cookies with macerated bits of strawberries if you're really feeling ambitious. Or you could make your own preserves--fig, perhaps?

I only had one main bug with these guys, besides the fact that my food processor totally didn't evenly chop up my hazelnuts. The dough breaks easily, so you have to make the thumbprints very gingerly. I used the back of a wooden spoon to make the indentations both times and that worked well. I filled the thumbprints with a currant jam which was really tasty!

All in all, these taste just like you expect them to. No hidden surprises, and though that can be a good thing, I thought it made these a little on the boring side. I think it's because the actually cookie part just wasn't very interestingly flavored. Maybe you could use the flavorings from the Sweet Cardamom Crackers instead--that was such a great flavored dough, and would taste amazing with the hazelnuts! I can't believe I just thought of that now. That's a million dollar idea there, that is.

So yeah, a little bit anticlimactic for a milestone like this one, but who cares! I've got some more recipes coming up that are...interesting. And delicious. And I'll try to post them sooner rather than later! Hazelnut Thumbprint Cookies
Makes about 2 dozen

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup plus 2 tablespoons sugar
  • 1 large egg, separated, each part lightly beaten
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/8 teaspoon coarse salt
  • 1/2 cup toasted skinned hazelnuts, ground
  • Strawberry jam, for filling

Directions

  1. Preheat oven to 325 degrees. Put butter and 1/2 cup sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 3 minutes. Add egg yolk and vanilla, and mix well. Reduce speed to low. Add flour and salt, and mix until just combined. Refrigerate dough for 2 hours.
  2. Stir together toasted hazelnuts and remaining 2 tablespoons sugar in a small bowl. Roll dough into 1-inch balls; dip balls in egg white, then in hazelnut-sugar mixture. Space 1 inch apart on baking sheets lined with parchment paper. Press down center of each ball with your thumb. Bake for 10 minutes. Remove from oven; press down centers again with the end of a wooden spoon. Return to oven. Bake cookies until golden brown, 8 to 10 minutes more. Let cool slightly on sheets on wire racks. Fill each center with jam. Cookies can be stored in a single layer in airtight containers at room temperature up to 2 days.

Gazza's Goulash with Rosemary Dumplings

Another recipe from the Abel & Cole Cookbook, this is a lovely warming one-pot meal just right for a day when we have snow on the 31st March! Although, I actually made this last weekend before the snow.

Gazza's Goulash with Rosemary Dumplings
Serves 6

The Goulash
2 glugs olive oil
1kg (21/4lb) braising beef such as chuck or blade, cut into 2.5cm (1in) chunks
2 large onions, peeled and roughly chopped
2 large garlic cloves, peeled and chopped
2 tbsp sweet Hungarian paprika (a very mild paprika)
2 tbsp tomato puree
4 mugs chicken or beef stock, plus more if you need it
2 bay leaves
4 potatoes, peeled and cut into 1 cm, 1/2 inch dice (you'll notice that mine are a bit bigger than that!)
salt and freshly ground pepper to taste
Soured cream, to serve 

The Dumplings
1 egg
1/2 mug water
1tbsp salt
1 mug plain flour
1 tbsp chopped rosemary

Heat a glug or two of olive oil in a large, heavy-based lidded pot, add the beef and brown it , then remove with a slotted soon.  You may have to cook the beef in batches so the pot is not overcrowded.  Once the beef is out of the way, fry the onions for 3-4 mintues.

Return the beef to the pot and throw in the garlic, paprika and tomato puree and give this a good stir around for a few minutes.  Add the stock and bay leaves and simmer with the lid on for  45 minutes over a very low heat.

While the pot is boilling away, prepare your dumplings: mix the egg, water and salt together, and then add the flour, combine it and mix in the rosemary.  Let the mixture rest for about 20 minutes or so.

Once the pot has been simmering for 45 minutes, add the potatoes and more stock if needed - you need the goulash to be quite wet for the dumplings to cook.  After about 15 minuites, when the potatoes are tender, add the dumplings by dolloping one teaspoon of the mix at a time into the pot.  Return the lid and leave this to cook for 10-15 minutes.  Season with salt and pepper to taste and serve with a dollop of soured cream.


Now for my verdict: 

The recipe - most of the recipes in the book use mugs for measuring, which is great if you are a novice cook without much equipment, however, it would have been nice to have weights as well for those of us who prefer more accurate measurements.

The goulash was absolutely delicious, the beef tender and the potatoes had soaked up all the lovely juices, I would be concerned if they were cut as small as was recommended that they would disintegrate but maybe not.  

The dumplings, on the other hand, were not as light and fluffy as I would expect from a dumpling.  Whenever I have made dumplings in the past I've used suet, there are good vegetarian suets available too, but as this is a beef stew ordinary suet should be just fine.  I'm adding a recipe below for the dumplings I've made before and never had a failure.

Alternative Dumpling Recipe from Delia Smith's Cookery Course
110g (4oz) self-raising flour
1/4tsp salt
50g (2oz) suet or vegetable suet
1 tsp herbs (rosemary in this case)
salt & pepper

Mix the flour, salt and pepper.  Stir in suet & herbs, add just enough water to make a soft but not too sticky dough, shape into 8 small dumplings.  Cook as above.

Fresh from the Oven - No Knead Bread

  • 15oz Strong White bread flour - it works best with all white I think
  • ¼ tsp instant easibake yeast (out of a sachet)
  • 1 tsp table salt

Stir together well then add 10.5 fl oz of lukewarm water (a mugful)

Slosh it round into a gooey lump of dough with a fork

Leave in a big bowl and cover with cling film or put the bowl in a bin bag
Leave it in kitchen for 16-18 hours – or more if you forget.


The 16hr Sloosh

Use a dough scraper/cutter or your fingers, to scrape the wet porridgy dough away from the sides, using plenty of flour to stop it sticking, and shuffle it back into a nice round shape. Don't be tempted to knead it.

Cover with a tea towel and leave for 2 more hours.

The Bake

Preheat oven to 200-220 and put in a lightly oiled Le Creuset or other large cast iron casserole with a lid on until the oven and the pan are super hot.

Again use the scraper and a good sprinkle of flour to detach the dough from the bowl without puncturing it’s airy goodness. Then quick as you can, without losing the heat from the oven and pan, tip the dough onto one hand then flop it into the hot pan the right way up again and put the lid back on and get it back in the oven immediately.

  • Bake for 30 minutes lid-on
  • Then cook for 10-12 minutes more, lid-off until golden brown


If it’s not hollow sounding on the bottom put it back in, without it's tin for an extra 5 minutes. Tip out and cool well before trying to slice

Tips

  • I find this works best for me if I make the dough around the school run (3.30pm) then do the first dough slooshing when I get up, then bake it mid morning. As you can see, the times can be very approximate! Another option might be to mix the dough on a Friday when you get in from work, sloosh it mid morning on Saturday and bake it at lunch time ready for Saturday evening. It seems like a long process but it really is no effort when you get your head round it.
  • If you haven’t got one yet it’s worth getting a dough cutter/scraper to save on sticky fingers. My plastic one was only 90p from a local cook shop.
  • My new Le Creuset (25cm) is a little bit too big for this recipe so I sit my lightly oiled 20cm mermaid pie tin in the bottom to help shape the loaf to be a bit taller and rounder. I also sometimes scatter a bit of semolina in the base for an extra crunchy bottom. You can use oil instead of flour to de-stick the dough from the mixing bowl, but it makes for a wetter and slighty denser outcome like the one shown at the end of this post. It is one of those loaves that comes out a little bit different every time anyway due to the extended prove.
