Lemon Pork

This is what I had for my supper tonight and it was delicious. It's a Rosemary Conley recipe from the Low Fat Cookbook. It also says it works well with chicken.



1lb (450g) lean pork tenderloin cut in to 1/2in (1cm) slices

12 sring onions

salt & freshly ground black pepper

2 tablespoons choppped fresh parsley



for the sauce

zest and juice of 2 small lemons

1 x 2in (5cm) piece root ginger, peeled and grated

4 tablespoons sherry

2 tablespoons light soy sauce

2 tablespoons honey

2 teaspoons cornflour

Heat a wok or large non-stick frying pan. Season the port, place in the wok or pan and brown on both sides.

Combine all the sauce ingredients. Reduce the heat under the pan and pour the sauce over the portk, stirring continuously. Add the spring onions and simmer, uncovered for 5 minutes, stirring occasionally.

Sprinkle with the parsley and seve with rice or noodles and salad.

Serves 4
Per serving: 198KCal/4.2g fat

Title: Marinade-Lemon Herb

This wonderful all purpose marinade uses lemon, garlic, and olive oil for its base.

It is perfect for marinating any type of seafood, such as shrimp scampi and works great as a base for grilled Mahi Mahi or your favorite tilapia fish recipes.

Use it on chicken or pork to brighten up the flavors while grilling.

Just soak your meat of choice in the marinade for 30 minutes and prepare as desired.

You'll find this an indispensable recipe in your kitchen.

Marinade Recipe:
1/2 cup cilantro leaves, parsley or tarragon
1 lemon
1/8 cup white wine, optional
3/4 cup olive oil
1 teaspoon garlic puree or 1 clove minced garlic

Roughly chop the cilantro and carefully remove the zest (outer yellow peel from the lemon). The zest adds a lot of flavor to this marinade.

Next, cut the lemon in half and add lemon juice to a mixing bowl. Add the wine, chopped cilantro and lemon zest, followed by the garlic.

Slowly pour the olive oil into the marinade and whisk quickly until it starts to thicken. This is called an emulsion.
When the marinade has thickened, let it sit about 30 minutes and then pour it over your meat.

Title: Roasted Pork Belly with Lemon, Honey and Thyme

Ingredients
4 tbsp honey
1.5kg pork belly (with bone in or ask your butcher to remove it but keep the bones)
200ml white wine
2 onions, cut in half
2 carrots, cut into chunks
2 tsp fresh thyme
Sea salt and cracked black pepper
300ml chicken stock
1 lemon

Method
Heat the oven to 150°C/Gas 3. De-bone and skin the pork belly. Score diagonal lines across the pork with a sharp knife. Rub with salt, pepper and thyme. Cut the onions in half, put the onions, cut carrots and the pork bones into the roasting tin. Cover with the removed skin this is now your trivet onto which you place the pork belly scored side up.
Pour the white wine into the roasting tin. Roast for about 2 hours until it is cooked through. Cover with foil if the scored skin is browning too quickly. Meantime mix the honey and lemon juice together to make the glaze.
When it is cooked, remove the pork from the oven and, using a pastry brush, glaze the meat by pouring the lemon mix over the top of the pork. Pop the glazed pork belly back in a hot oven (about 180°C or 200°C) to brown for ten minutes.
Take the meat out of the oven, put it on a plate and cover with tin foil to allowing it to rest. De-glaze the roasting pan by placing it on the hob, adding the chicken stock and mixing well. Then strain the juices from the pan into a saucepan and bring to a simmer to reduce and until it thickens slightly. Serve the pork with Fagioli alla Maruzzara and the sauce spooned over.

More Prawns

I have one courgette plant growing in a big pot, so far I've had about 5 courgettes.  I picked a couple on Friday night and sauted them with garlic and a red pepper.
I don't normally buy this sort of ready prepared rice, but had bought it for our self-catering holiday and in the end we didn't use it.  I thought it would be ideal for a quick supper dish.  I cooked up a small amount of ordinary basmati rice and added it, as the packet wouldn't have provided enough for 3 people.

I added a bit of tomato puree, some sweet chilli sauce, some prawns and quartered tomoatoes.

It was very quick and tasted good.

Title: Moroccan inspired prawn & spinach Tangiers (حلال)

Ingredients
•100g fresh uncooked prawns
•2 large-handed grabs of large spinach leaves
•2 fat vine tomatoes
•1 garlic clove
•1 level tsp cumin seeds
•3tbsp olive oil
•Juice of ¼ small lemon
•Flaked sea salt and ground black pepper
•1 small frying pan
Method

1. Get each prawn ready by peeling the shell away. Make an incision down the back and hoick out the black intestine and discard. Roughly chop the prawns and put to one side.
2. Wash the spinach free of beasties, by all means life-guarding any that appear to be poor swimmers. If the stalks are particularly fibrous, snap them off and discard. Bunch up the spinach and chop it roughly.
3. Cut the stalk base from each tomato, criss-cross the other end and cover in just-boiled water for 30 secs. Tip away the water and peel off the skins. Chop the tomatoes roughly, but not too large, taking care to save the seeds and juice. Peel and finely chop the garlic.
4. Take the frying pan and dry-fry the cumin seeds over a medium heat until their aroma comes to the nose, by which time they will be nicely toasted. Now add 2tbsp of the olive oil, followed quickly by the spinach. It will crackle and pop as you add it. Turn in the pan, adding fresh leaves as you go until it is all in and wilted.
5. Now add the tomatoes, garlic, lemon juice and a good amount of salt and black pepper. Cook together fairly rapidly, stirring occasionally, making sure that the contents don't stick and burn. You want to get rid of an obviously watery appearance without drying out the dish. Transfer to a bowl and, without washing out the pan, add the remaining oil, then return the pan to a medium-high heat.
6. Fry the roughly chopped prawn meat briskly until opaque and a little golden (a couple of minutes or so). Flop the spinach and tomato mixture back on top. Cook until bubbling and serve immediately in the Moroccan style with warm white rolls and mint tea.

Title: Gelt Inc: Whirlwind of a day in Bakersfield

We had a busy day in our second home of Bakersfield. We began the day checking up on our rehab fourplex project on Bernard St. Everything was going as planned. It is vital to regularly oversee the rehab of your property so you can cut the time down and keep costs in check.

We have successfully added washer and dryer hookups in these units in order to provide the tenants just one more desirable amenity. We had to be creative when installing these. We installed them in the closet. We had to enlarge the closet openings in order for the tenants to get their machines into the closet. Our plumber and carpenter did excellent work.

We have painted 3 out of the 4 units and are preparing to work on the cabinetry, electrical, and general plumbing issues next.

At lunch time Damian and I attended our first KEDC lunch. We learned all about KEDC and met other business leaders in the community. We are looking to be a part of this excellent organization that does so much for the city of Bakersfield.

Kern EDC is a private nonprofit company dedicated to ensuring a diverse and strong economic climate for all businesses in Kern County. Kern EDC recruits new businesses to Kern County, helps established businesses with relocation and/or expansion efforts and works with local companies to provide economic data, workforce information and facilitation of the regulatory process.

After this meeting we went to check up on all of our properties. Four of our properties are within walking distance to a Boys and Girls Club. We have passed by this building hundreds of times without knowing much about it. We finally decided to go in and see what it was all about.

To our surprise, this facility was state of the art. It had a large basketball court that was bigger than my high school's! They also had a large art room, reading rooms, computer rooms, a kitchen, and much more. We were so impressed with the quality of the facility and the sheer number of children that were there after school hours.

At Gelt Inc. we believe in supporting our local communities where we invest our money and time in. We are proud to say that we made our first sizable donation to this local facility that provides so many activities for the local youth.

It is our goal to get more and more involved with other philanthropic organizations in Kern County.

We are also excited to say that we will be closing on our 8th fourplex acquisition in Bakersfield tomorrow.

Holiday Survival Week ~ The 'Eyes' Have It ~ Potatoes.

Ham & Cheese Mashed Potatoes
This recipe can be made with homemade mashed potatoes or instant mashed potatoes. Either way it tastes fabulous!

Ingredients:
2 cups of mashed potatoes
3/4 teaspoon of garlic salt
1 cup of fully cooked ham, diced
1 cup of cheddar cheese, shredded
1/2 cup of whipping cream, whipped

Directions:
Begin by combining the potatoes and garlic salt in a medium sized bowl. In a greased baking dish, spread the potatoes in the bottom. Add ham by sprinkling it all over. Fold the cheddar cheese into the whipped cream. Spoon it over the ham. Bake at 450°, uncovered for 15 minutes or until golden brown. Makes 4-6 servings.

Cheesy Mashed Potato Pots

Ingredients

2 pounds cut up, red potatoes, peeled
1/2 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
Milk (optional)
1/2 cup whipping cream
1/3 cup shredded cheddar cheese
Freshly ground black pepper (optional)

Directions
1. Preheat oven to 350 degrees F. In a covered large saucepan, cook potatoes in enough boiling water to cover for 15 to 20 minutes or until tender. Drain.

Mash with a potato masher then beat with an electric mixer on low speed. Season with the salt and 1/8 teaspoon pepper. If necessary, add a small amount of milk for desired consistency.

2. Grease four 10- to 12-ounce individual casseroles or custard cups or a 1- to 1-1/2-quart casserole. Spoon potato mixture into prepared casserole(s). In a chilled medium bowl, beat whipping cream with chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl over); fold in cheese. Spoon cheese mixture over potatoes. Place casserole(s) on a baking sheet. Bake, uncovered, about 20 minutes or until lightly browned and heated through. If desired, sprinkle with additional black pepper. Makes 4 servings.

Walnut & Sage Potatoes Au Gratin
 
Ingredients

2 pounds small new potatoes
1 medium onion, chopped
1 teaspoon minced garlic (2 cloves)
3 tablespoons extra virgin olive oil
3 tablespoons all-purpose flour
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
2-1/2 cups milk
3 tablespoons snipped fresh sage
1 cup shredded Gruyere cheese (4 oz.)
1/3 cup broken walnuts
Fresh sage leaves (optional)

Directions

1. Preheat oven to 350 degrees F. Grease a 2-quart casserole; set aside. Halve potatoes lengthwise. Place potato halves in colander. Rinse with cold water; drain.

2. For sauce: In a medium saucepan, cook onion and garlic in hot oil over medium heat until tender. Stir in flour, salt, and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Remove from heat; stir in snipped sage.

3. Layer half of the potatoes in a greased 2-quart casserole. Top with half the sauce. Sprinkle with half of the cheese. Repeat layering with potatoes and sauce. (Cover and chill remaining cheese until needed.)

4. Cover and bake for 40 minutes. Uncover and bake about 25 minutes more or just until potatoes are tender. Sprinkle with remaining cheese; top with walnuts. Bake, uncovered, for 5 minutes more. Let stand for 10 minutes before serving. If desired, garnish with sage leaves. Makes 10 to 12 servings.

Microwave Directions: Using microwave-safe casserole, prepare as directed through Step 3. Cover with plastic wrap, turning back edge of wrap to allow steam to escape. Microwave on 70 percent power (medium-high) for 25 to 30 minutes or until potatoes are tender. Sprinkle with remaining cheese; top with walnuts. Cover and let stand for 5 minutes.

What’s Up With Green Tea?

Crock Pot Week - Lasagna

Today's recipe is very easy and delicious. I prefer to use my larger oval shaped crock pot for this recipe as there is less cutting or breaking of the noodles necessary.  You don't even need to purchase special noodles (those no-boil kind) I have made this recipe for years and always have used standard lasagna noodles.  This is a great recipe for large gatherings.


Ingredients:
1 lb. ground beef
1 large onion, finely chopped
2 garlic cloves, crushed and minced
1 large jar spaghetti sauce (such as Ragu in the 1 lb. 10 ounce jar)
1/4 cup water
1 package (8 ounces) lasagna noodles
16 ounces shredded mozzarella cheese
1 lb. ricotta cheese
1/4 cup milk
1 egg
1/2 cup shredded Parmesan/Romano cheese
Salt and pepper to taste

Preparation:
Brown the beef, onion, and garlic in a little oil in a frying pan. Drain off any grease.

Add the spaghetti sauce and water into the browned meat mixture. Mix well (note: you want the sauce to be a bit thin as the noodles will soak up the water during the cooking process).

In a separate bowl, mix the ricotta cheese, milk, and egg. Beat until thoroughly mixed and smooth. Then mix in the mozzarella cheese and the grated cheese, so that all the cheeses are combined.

Spray the sides of the crock pot lightly with Pam© or similar cooking spray.

Put about 1/4 of the meat and sauce mixture in the bottom of the Crock Pot. Place a layer of noodles on top of that (break or cut them if needed). Put about 1/3 of the cheese mixture on top of that. Then repeat with sauce, noodles, cheese for another 2 layers. Top with meat sauce. Cook on low for 6 hours or until noodles are tender.

Knock Knock!

I saw this recipe for 'Knock-up Fruit Cake' on Meandering Through My Cookbook, a blog by Hopeeternal.  It sounded like my kind of recipe i.e. basic recipe plus whatever happens to be in your cupboard, which for anyone who has read my blog for a while will know is pretty much how I cook!

The recipe was easy to follow and created a similar result to the picture on the blog, but I have to say that it did not keep particularly well.  I'm not sure if I overbaked it, although it was not burnt, but it seemed a little bit dry for my taste.  I may try again but think I prefer a boiled fruit cake with tons of fruit and really moist.  It's just a matter of taste.  I used dried cranberries, raisins and chopped dates for my fruit, I also used butter rather than margerine and I have to say that the cake part did have a lovely taste.

Tall Cakes...

Tall Cakes... There's a nice trend going on right now...people are ordering cool, tall cakes for their celebration more than ever (they're not just for weddings!)
We adore this fabulous fortieth birthday presentation; a bottle of Patron (provided by the client) is always a welcome addition to any party.

Fresh from the Oven - No Knead Bread

The January challenge at Fresh from the Oven was to make this No Knead Bread in a cast iron casserole! It sounded quite easy and didn't involve too much work so I had a go. Here is the recipe supplied by Claire:


No Knead Bread

The Mix

  • 15oz Strong White bread flour - it works best with all white I think
  • ¼ tsp instant easibake yeast (out of a sachet)
  • 1 tsp table salt

Stir together well then add 10.5 fl oz of lukewarm water (a mugful)

Slosh it round into a gooey lump of dough with a fork

Leave in a big bowl and cover with cling film or put the bowl in a bin bag
Leave it in kitchen for 16-18 hours – or more if you forget.


The 16hr Sloosh

Use a dough scraper/cutter or your fingers, to scrape the wet porridgy dough away from the sides, using plenty of flour to stop it sticking, and shuffle it back into a nice round shape. Don't be tempted to knead it.

Cover with a tea towel and leave for 2 more hours.

The Bake

Preheat oven to 200-220 and put in a lightly oiled Le Creuset or other large cast iron casserole with a lid on until the oven and the pan are super hot.

Again use the scraper and a good sprinkle of flour to detach the dough from the bowl without puncturing it’s airy goodness. Then quick as you can, without losing the heat from the oven and pan, tip the dough onto one hand then flop it into the hot pan the right way up again and put the lid back on and get it back in the oven immediately.

  • Bake for 30 minutes lid-on
  • Then cook for 10-12 minutes more, lid-off until golden brown


If it’s not hollow sounding on the bottom put it back in, without it's tin for an extra 5 minutes. Tip out and cool well before trying to slice

Tips

  • I find this works best for me if I make the dough around the school run (3.30pm) then do the first dough slooshing when I get up, then bake it mid morning. As you can see, the times can be very approximate! Another option might be to mix the dough on a Friday when you get in from work, sloosh it mid morning on Saturday and bake it at lunch time ready for Saturday evening. It seems like a long process but it really is no effort when you get your head round it.
  • If you haven’t got one yet it’s worth getting a dough cutter/scraper to save on sticky fingers. My plastic one was only 90p from a local cook shop.
  • My new Le Creuset (25cm) is a little bit too big for this recipe so I sit my lightly oiled 20cm mermaid pie tin in the bottom to help shape the loaf to be a bit taller and rounder. I also sometimes scatter a bit of semolina in the base for an extra crunchy bottom. You can use oil instead of flour to de-stick the dough from the mixing bowl, but it makes for a wetter and slighty denser outcome like the one shown at the end of this post. It is one of those loaves that comes out a little bit different every time anyway due to the extended prove.

I would definitely recommend this loaf and I know that other bakers who didn't have a Le Creuset casserole used other kinds of pots with lids (it's the steam that is important), so why not check out their blogs via the Fresh from the Oven blog and have a go yourself.

Holiday Survival Week ~ Quick & Easy Appetizers

I've compiled some Quick & Easy Appetizer Ideas for you ~ I've made most and sometimes easy is best! Don't tire yourself out so much that you don't have time to enjoy the holiday festivities.


Tortilla Roll 'Em Ups. Spread a thin layer of your favorite cream cheese spread on large flour tortillas (you can use plain, herb, sun-dried tomato, or spinach-flavored). Top with thin layers of turkey or roast beef, thinly sliced tomato, and baby spinach leaves. Roll the tortilla up very tightly, similar to a jelly roll. Chill rolls for about 30 minutes, then cut rolls into slices, creating small finger sandwiches. Note: These are really easy & fun to make ~ get the kids involved.



A Little Blue. Fill baked miniature phyllo dough shells with a small dollop of softened cream cheese. Top with a bit of crumbled blue cheese and a sprinkle of snipped tart dried cherries. If you like, sprinkle with candied pecans or almonds.


Where's the Shrimp? Who doesn't love shrimp? For a super-easy appetizer, thaw cooked frozen shrimp (or steam, saute, or boil your own raw shrimp). Place bowls of dipping sauces on a platter (such as tartar or cocktail sauce or aioli), then surround the bowls with the cooked shrimp.



A Taste of the Mediterranean. Purchased hummus and some yummy crackers or pita chips are an easy way to either keep hunger at bay until dinner or to supplement an appetizer spread. Select a couple of different flavors, such as roasted red pepper, roasted garlic, or black olive.

Dip This. Every party needs a dip, but here's an option that's a little bit more gourmet. Purchase garlic- or basil-flavored oil or make your own variations by stirring herbs, garlic, or grated Parmesan cheese into olive oil. Pour the oil into small dipping dishes and serve with chunks of focaccia or baguette slices for dipping.

Twisted Salsa. Here's a fun salsa variation that's almost a meal in itself. Combine drained canned black beans, thawed frozen corn, chopped roma tomatoes, sliced green onions, chopped cilantro, chopped green pepper, and chopped avocado. Toss the mixture with some lime juice, salt, and pepper. If you like, you can also add chopped garlic, sliced black olives, chopped jalapeno peppers, or anything else! Serve with tortilla chips, or just give guests a spoon to dig in!



Relish the Ease. Prepare a relish tray like no other! On a platter, artistically arrange roasted red peppers; green, black, or specialty stuffed olives; cheese cubes; sliced meats, such as pastrami, ham, or salami; marinated artichoke hearts; smoked sliced salmon lox; marinated or fresh vegetables; and pickled peppers. If you like, serve the relish tray with hard or soft breadsticks.

An Apple a Day. Prepare a platter with sliced apples, pears, and/or grapes, crisp bread or crackers, and your choice of cheese, such as blue or brie.

Simply Salmon. With a pastry bag, pipe flavored cream cheese (such as chive) on cucumber slices. Top each cucumber slice with a small piece of purchased smoked salmon. If desired, garnish with fresh chopped chives.

Serve Them Up



Here's a great look for a casual holiday buffet table. Simply roll napkins and arrange them in a vase, basket, or bowl. The napkins will add color to the table and be handy for guests to pick up.

Pico de gallo

I guess it's Mexico week here at Memorie di Angelina and why not? If you think of it, some of the foods that most typify Italian cooking—tomato, zucchini, peppers, pepperoncino, corn for polenta, just to take a few examples—all come from the New World and more specifically from Mexico. (Potatoes, another New World import, are from Peru.) So it should come as no surprise that there are similar tastes in Mexican cooking and even some dishes that you might even mistake for Italian. 

Pico de gallo, which means "rooster's beak" in Spanish, and  is often  called 'salsa' in English, is a prime example. A simple relish of tomato and onion, seasoned with jalapeños, cilantro and lemon juice, it goes perfectly well with any number of Italian dishes, in particular with grilled meats and fish. 

Take some best quality tomatoes, split them in half and remove the seeds. Then chop the flesh into small cubes. Chop an equal amount of white onion, a handful of finely chopped cilantro, a finely chopped jalapeño or other chile. Season generously with salt and sprinkle with a bit of freshly squeezed lemon or lime. Let the pico de gallo rest for a few minutes so the flavors meld before serving. 

NOTES: Obviously, the results will depend on how ripe and delicious the tomatoes are. They should be nice and ripe but not at all mushy—despite its English name 'salsa', pico de gallo is more of a relish than a sauce. The very best choice would be locally grown, farm tomatoes. (See my recent post on spaghetti al pomodoro crudo for some tips on choosing tomatoes when these are not in season.) If you can't find good tasting tomatoes, personally I would not bother making it. There are a few tips out there for adding flavor to less than ideal tomatoes; Jacques Pépin, for example, advocates adding a spoonful of ketchup. Well, Jacques is probably my favorite celebrity chef—one of the few I actually admire, in fact—but on this one we part company. For me, at least, pico de gallo is all about freshness. 

Some recipes I've seen call for adding quite a bit of liquid—either lemon, lime or even orange juice—so the result really is sauce-like. Not my favorite way to make pico de gallo. I prefer the dry, relish-like variety, which is why I often will remove the seeds. But if you're in a hurry or like a bit more liquid, there is no crime in leaving in the seeds. A few recipes I've seen call for a bit of  oil, but personally I don't see the need. And some recipes call for cucumber, radishes, avocado or even mango (!) Again, I like to keep it simple.

Apparently, there are various stories to explain the name of this dish, many of them relating the reference to the rooster—a symbol of machismo in Latin culture—with the hot chile. But not all variations of the dish contain hot chile. Others say that the name refers to the look of the dish—a combination of small diced ingredients that resemble bird feed. Another story is that the name is a double entendre: pico, which is beak, sounds like the verb picar, which means to chop or mince, and to 'pick' or 'peck' (like a bird) in the sense of eating lightly. Take your pick! 

Pico de gallo is sometimes called salsa mexicana, but is should not be confused with salsa roja, which is a cooked sauce made with similar ingredients (but no lemon juice) and very popular in Tex-Mex cooking, featuring prominently in Mexican restaurants in the US, served before meals with tortilla chips. Personally, I much prefer the raw version.
